Introducing a popular delicacy from across southern Africa, beloved in Zambia, Mozambique, Malawi, Kenya, and Zimbabwe. According to my TikTok fans, this dish is often enjoyed as a relish. I have personally tried it and found that its salty texture is balanced by its delicious taste, particularly when paired with mealie pap. It's also a common dish in the Limpopo province of South Africa. This recipe is easy to make and can be served as a side dish to any meal.


Ingredients

  • 250g Kapenta (washed in warm water)
  • 1 Onion
  • 1 Grated Tomato
  • Mild Curry Powder
  • Paprika
  • 1 Tspn Paprika
  • 2 Tspn Water

Method

  1. Fry the Kapenta until golden brown.
  2. Add onions and sauté then add tomatoes.
  3. Fry until the tomatoes are very soft add the curry of choice then serve.
